This beer was named in honor of the yeast that pooped out as soon as they hit their new digs in secondary.
Don't let the name fool you, though. This is a great beer. Lazy yeast contribute a nice sweetness and low alcohol content, perfect for accompanying a dinner which precedes two hours of putting sub-5 children to bed. (Not so good for when they're 18 and off to college. Those days will likely call for iced tea, brewed in Long Island)

Ingredients
- 7 lb Dark LME
- 1/2 lb Light Roasted Barley
- 1/2 lb Dark Roasted Barley
- 1/2 lb Caramel Malt (60L)
- 1/2 lb Chocolate Malt
- 2 tbsp dutch process cocoa
- 1 oz whole Goldings
- 1 oz whole Fuggles
- Safale-04
Procedure
- Steep grain at 150F for 30 minutes.
- Remove grain and bring water to boil.
- Boil with 1 oz Goldings for 60 minutes.
- At 10 minutes remaining, add 1/2 oz Fuggles and cocoa.
- At 1 minute remaining, add 1/2 oz Fuggles
- Sparge into 2 gl cold water.
- Top off to 5 gallons.
Ferment
- Pitched dry yeast driectly from packet.
- Racked to secondary 3 days later (1.023).
Notes
- This batch clearly shows the importance of oxygen and temperature in yeast development. I think the wort was just too cold, the yeast didn\'t have enough O2, and the fermentation wasn\'t warm enough.
