One Armed Bandit

I called this one "One Armed Bandit" before I had even had a taste, because I honestly had no idea how it would turn out. I screwed up so many things during the brewing process, I was convinced it would be a throwaway. Didn't sanitize properly, didn't measure properly, introduced a couple new steps to my process... It was a little nerve-wracking.
Like those jangling, flashy pocket raiders in Vegas though, sometimes you hit a hot streak. This beer is the reason I brew. Huge citrus hop aroma, big grapefruit on the tongue with initial sweetness, and then a nice long bitter finish. Full bodied, strong, and just plain good. No doubt I'll be making this again.

Ingredients
- 7 lb Light LME
- 3 lb Ex Light DME
- 1.5 lb Caramel malt (40L)
- 2 oz whole leaf Chinook
- 2 oz whole leaf Cascade
- 2 oz whole leaf Amarillo
- 2 oz whole leaf Cluster
- Wyeast 1056 (American Ale)
Procedure
- Steep grain @ 155 for 30 minutes.
- Remove grain and bring water to boil.
- Boil with 1 oz Chinook and 1 oz Cluster for 60 minutes.
- At 45 minutes remaining, add 1 oz Cluster.
- At 30 minutes remaining, add 1 oz Chinook.
- At 15 minutes remaining, add .5 oz Cascade and .5 oz Amarillo.
- At 10 minutes remaining, add .5 oz Cascade and .5 oz Amarillo.
- At 5 minutes remaining, add .5 oz Cascade and .5 oz Amarillo.
- Sparge into 2 gallons cold, pre-boiled water.
- Top off with cold, pre-boiled water.
Ferment
- Oxygenated with pure O2 for 2 minutes.
- Pitched 500ml starter at around 65-80F (forgot to take temp).
- Racket to Secondary 5 days later (1.025) with .5 oz Cascade and .5 oz Amarillo.
- Kegged two weeks later.
Notes
- Oxygen made a huge difference in lag time. I won\'t ever brew again without it. Fermentation took off like a rocket.
