A little on the small end for Strong Scotch Ale, but definitely bigger than a Scottish Export, Hopeless is the answer to 2008's hop shortage. Very low on bitterness and hop aroma, yet sacrificing nothing in terms of flavor. It's a great ale for winter nights; robust, strong, and packed with caramel and roast malt character.

Ingredients
- 7 lb Light Liquid Malt Extract
- 1 lb Wheat Dried Malt Extract
- 2.5 lb Golden Promise Malt
- .5 lb Biscuit Malt
- .5 lb English Caramel Malt
- .25 lb Aromatic Malt
- .25 lb Chocolate Malt
- 1 oz Fuggles
- .5 tsp Irish Moss
- Safale S-05
Procedure
- Mash grain in cooler with 5.5 quarts 167F water for 30 minutes.
- Recirculate, drain, and add to 2 quarts boiling water in the brew pot.
- Mash grain with 5.5 quarts 185F water for 5 minutes.
- Recirculate, drain, and add to brew pot.
- Add LME, DME and bring to a boil.
- Add 1oz Fuggles and boil for 60 minutes.
- At 15 minutes remaining, add Irish Moss.
- Cool and add to fermenter. Top off to 5 gallons with cold, pre-boiled water.
Ferment
- Pitch re-hydrated yeast.
- Ferment at 68F.
- Racked to secondary after 6 days.
- Keg or bottle when clear (about 1-2 weeks).
