Shrimp Surprise doesn't have anything to do with actual shrimp, although I might brew up something like in the future that for people I don't really like.
Instead, it reminds a person that sometimes we get what we want before we actually know that we want it. When that happens, a pint of dark, rich beer can help erase apprehension and (ironically) help a person to see more clearly. Shrimp Surprise is dedicated to happy accidents the world over.

Ingredients
- 7 lb Light Liquid Malt Extract
- 2 lb Marris Otter
- 1 lb Pre-gelatinized Oatmeal
- 1 lb Crisp Crystal Malt (80L)
- .25 lb Chocolate Malt
- .5 lb Roast Barley
- .25 lb Black Patent Malt
- 1 oz Whole Northern Brewer
- 1 oz Whole Fuggles
- .5 tsp Irish Moss
- Safale S-05
Procedure
- Mash grain in cooler with 5.5 qts 162F water for 30 minutes.
- Recirculate, drain and add to 2 qts boiling water in brew pot.
- Mash grain with 5.5 qts 185 F water for 5 minutes.
- Recirculate, drain and add to brew pot.
- Add LME to brew pot and top off to 3 gallons.
- Bring to boil and add 1 oz Northern Brewer.
- Boil for 60 minutes.
- At 15 minutes remaining, add .5 oz Fuggles and .5 tsp Irish Moss.
- At 5 minutes remaining, add .5 oz Fuggles.
- Cool, strain into fermenter, and top off to 5 gallons with cold, pre-boiled water.
Ferment
- Re-hydrate and pitch yeast.
- Oxygenate with pure O2 for one minute or so.
- Rack to secondary 1 week later or when beer starts to clear.
- Bottle or keg when clear.
